Mandarin Orange Salad Recipe

Dressing:
2 Tbsp. sugar
2 Tbsp. vinegar
1/4 cup oil

Combine sugar, vinegar, and oil for dressing. This makes enough for two salads. You may double, or triple for more.

Sugared Almonds:
1/4 cup slivered almonds
2 Tbsp. sugar
1 small can Mardarin oranges, drained

Heat almonds and sugar in saucepan over medium heat, stirring constantly, until all sugar is melted and almonds are coated and brown. Be careful, they burn easy. Spread on wax paper to cool. Break apart. Store in a airtight container.
Toss lettuce salad with desired amount of oranges. Sprinkle on sugared almonds. Add dressing to taste. Great spring salad!
