Baked Lutefisk Recipe

3 lbs. lutefisk
1 tbsp. butter
1 tbsp. salt

Butter a glass baking dish, place fish in dish. (fish should be skin side down). Sprinkle with salt. Cover with foil. Bake at 350', 30-40 minutes. Test with fork. This should not be over cooked! Pour off any liquid and serve with melted butter or cream sauce.

Cream sauce:

3 tbsp. butter
2 1/2 cups milk or half and half
2 tbsp. flour
Salt and pepper

Melt the butter, gradually add the flour, then the liquid and salt and pepper. Simmer 5 minutes and pour into gravy boat, serve with lutefisk.

Tip: lutefisk will discolor metal. Wait till you see what it does to your silverware! It is best to eat it with a stainless steel fork.
