Zucchini-Pineapple Bread

3 eggs
2 c. sugar
2 tsp. vanilla
1 c. oil
2 c. zucchini, unpeeled and shredded
1 (8 oz.) can crushed pineapple
3 c. flour
1 tsp. salt
2 tsp. baking soda
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
If desired also add 1 c. nuts 1 c. raisins

Beat eggs, oil, sugar and vanilla until foamy. Stir in zucchini and pineapple; blend in rest of ingredients. Bake in loaf pans at 350' for 1 hour.
