Pickled Carrots(sweet)

Interesting recipe for carrots
1 quart vinegar
1 tablespoon whole cloves
1 tablespoon whole Allspice
1 tablespoon mace
1 quart sugar
Stick cinnamon

Boil young carrots until skin slip off. Remove skins, slice,
or leave whole. Pour syrup made of vinegar, sugar and
and spices (in  bag) boiling hot over carrots. Let stand
overnight, then bring to boil, boil 5 mins. Remove spices
and pack carrots into clean Kerr jars. Fill within 1/2 inch
of top of jar with the hot spiced syrup. Put on cap, screwing
the band firmly tight. Process 10 mins. in water bath.
