Easy Strawberry-Rhubarb Jam

Image
I wanted a quick strawberry-rhubarb jam recipe. I did a double batch, and it made 10, 1/2 pints. Single batch: 5 cups rhubarb, diced, 1/2 in. thick 3 cups Sugar 1 sm. pkg. strawberry jello Combine the diced rhubarb and sugar and let stand overnight. I covered mind and set it on my counter. Next morning bring mixture to 'close' to boiling, then simmer for 10 - 15 minutes. Stir in package of Jello. Pour into jam jars and freeze when jam cools. Tip: I would use a 1/2 sm. pack of jello and 1/2 sm. pack unflavored gelatin per batch. I think it's to sweet using what the recipe calls for. But, it does depend on your taste.
