Brandy Slush Recipe

If you like Brandy liquor, try this delicious Brandy slush!

9 c. water, divided
2 c. sugar
4 bags Lipton green tea
2 c. brandy
1 (12 oz.) can frozen orange juice
1 (12 oz.) can frozen lemonade

Boil 7 cups water and sugar. Cool. Boil remaining 2 cups
water and pour over tea; soak 10 minutes. Mix in ice
cream bucket or similiar size container. Add brandy, orange
juice, and lemonade. Put in freezer and let freeze, not solid. Stir
occasionally to mix. Serve half glass slush with half glass
7-Up. Great for hot summer days!


Caribbean Shrimp Spread Recipe

Fast easy caribbean shrimp spread

1/2 teas. jerk seasoning (dry)
1 (8 oz.) whipped cream cheese spread
1/4 treas. lime peel, grated
1/2 lb. de-veined peeled shrimp, tails removed, shrimp chopped
4 med. green onions, chopped
2 Tbsp. red bell pepper, chopped
2 Tbsp. cheddar cheese, shredded
Assorted crackers or cut up fresh vegetables

Stir seasoning into cream cheese container. Spread mixture
on large serving plate or dinner plate. Top with lime peel,
shrimp, onions, bell pepper and cheese. Serve immediately
with crackers or vegetables.


Nut Goodie Bars Recipe

Delicious Nut Goodie Bars

6 oz. chocolate chips
6 oz. butterscotch chips
1 c. peanut butter
1/2 c. milk
2 T. regular vanilla pudding
3 c. powdered sugar
1/2 teas. maple flavoring
1 c. salted peanuts

Melt chips and peanut butter and spread 1/2 of mixture in a
13 x 9 inch greased pan and put in refrigerator to set. Bring
butter, milk and pudding to simmer; then add powdered sugar
and maple flavoring. Spread this over chocolate mixture and
chill again. Add 1 cup salted peanuts to remaining chocolate
mixture and spread on top. Chill until firm.


Sunrise Eggs Recipe

Sunrise Eggs Recipe

1 box seasoned croutons
2 (12 oz.) Jimmy Deans sausage rolls
1 can cream of mushroom soup
8 eggs
2 c. shredded cheddar cheese
3/4 teas. prepared mustard
3 c. milk

Place croutons in a well greased 13x9 in pan. Place cheese
on top of croutons. Brown sausage, drain and put on top of
cheese. Beat eggs, mustard and 2-1/2 cups milk. Pour over
layers, cover with foil and refrigerate overnight. Before
baking, mix soup and 1/2 cup milk and pour over eggs. Bake
at 350' for 1-1/2 hours uncovered.


Shrimp Spaghettini Recipe

Delicious Shrimp Spaghettini

1 box angel hair pasta
3 lbs. small shrimp
1 lb. Velveeta cheese
1 med. onion
1 bell pepper
1 jar Pace Picante sauce
1 med. can mushrooms (optional but recommended)
1 T. butter for melting
Season with Tony Chachere's

Melt butter, saute' onions and pepper. Add shrimp and
season lightly to taste. Add mushrooms and let simmer.
Prepare cheese on low heat and melt. Add picante sauce
to help cheese melt stirring constantly. Cook angel hair
pasta. Mix all ingredients into pot. Simmer on low to
medium heat for 1 hour until shrimp is fully cooked.
Ready to serve.


Possum Stew Recipe

Easy Possum Stew

1-1/2 to 2 lb. possum (may substitute beef)
1 lg. can tomatoes or tomato juice
Whole potatoes and carrots, peeled, enough for family
1 med. onion, sliced
1 can green beans
1/3 c. tapioca

Place all ingredients in roaster and sprinkle tapioca over top.
Place in slow oven at 250' and bake 6 to 7 hours.
(This is a very easy meal. Easy to increase for crowds.)


Delicious Chinese Hot Dish Recipe

Simple easy to make delicious Chinese Hot Dish

1 lb. ground beef
1 c. cooked celery
1 can cream of mushroom soup
1 cam cream of chicken soup
1 c. dry Minute Rice
3 T. soy sauce
1 med. onion, diced
Sm. bag Chinese noodles

Tip: I also add a small can of stems and pieces mushrooms. (optional)

Brown meat and onion. Add celery and liquid it was cooked in.
Combine all the other ingredients except Chinese noodles. Put
in roaster or casserole dish. Sprinkle noodles on top.
Bake 1 hour at 325'. Makes 8 servings.


Pineapple Dr. Pepper Beans Recipe

Pineapple Dr. Pepper Beans

1/2 lb. smoked bacon, sliced
1 lg. yellow onion, diced
2 bell peppers, diced
1 c. mushrooms, chopped
4 garlic cloves, minced
2 (28 oz.) cans pork and beans
2 tomatoes, diced
1/2 c. tomato paste
1/2 lb. summer sausage, sliced
1 c. brown sugar
1 c. medium Pace Oicante sauce
1 (16 oz.) pineapple tibits, drained
1 can Dr. Pepper

Slice bacon into 1/2 in. strips then fry in frying pan until crisp.
Add onions, bell peppers, mushrooms and garlic and continue cooking
until tender. Combine with remaining ingredients in crock pot. Cover
and simmer 30 to 40 minutes. Makes 10 to 12 servings.

General Hints for Vegetarian Cooking

Common Substitutes:

Ground Beef: Use texturized vegetable protein or soy meat substitute, which
is found in bags in the frozen health food section of most grocery stores.
One brand is Morningstar farms. TVP won't work for meatballs. (I've try it!)
but it will work for spaghetti, chili, and casseroles.

Chicken or Beef Broth:

Vegetable broth is sold in cans, cartons and cubes in the health food section.
Nature valley and Westbrae Natural are 2 good brands. Vegetable broth will work
up into a respectable gravy, especially if you can play with some spices.

You can even make chicken broth:

1 1/3 c. nutritional yeast flakes
3 T. onion powder
2 1/2 tsp. garlic powder
2 1/2 T. salt
2 1/2 T. Italian seasoning mix, dried
(in the spice section or mix your own)
2 T. dried parsley
1 tsp. celery seed

hamburgers, chicken burgers and even spicy black bean burge…

Brie with Cranberry Sauce and Pistachio Nuts

! (8 oz.) round or wedge brie cheese (with herb or plain)
1/4 c. whole-berry cranberry sauce
! T. coarsely chopped pistachio nuts

Sliced baguette loaf or crackers, whatever one desires
Heat oven to 350'. Lightly brush round pan, 8 x 1 1/2 inch or
oven proof plate. Place cheese in center of pan, (do not peel
coating from cheese) Bake uncovered, 8-10 minutes, or until
cheese is soft and partially melted. Top cheese with cranberry
sauce and nuts. Serve immediately with bread. Yields 6 servings
