My Stewed Tomatoes

My Stewed Tomatoes This year when I stewed, I added onions and green peppers to one of my batches. Makes it easier when making a batch of homemade chili. Just pour it in the chili pot. You can also add jalapeno's to the batch of tomatoes if you like them also.

Bunuelos Recipe These are sooo Good! 4 cups flour 1 tsp. baking powder 1 tsp. salt 1/2 cup sugar 2 eggs 1 cup milk 4 tbsps. unsalted butter (melted) A mixture of cinnamon and sugar in a bowl for rolling later. In a large bowl, mix flour, baking powder, salt, and sugar. In a smaller bowl, beat eggs and milk. Then add this gradually, beating to flour mixture. Add melted butter; beat. Place dough on floured surface and knead until silky elastic. Roll into balls, and flatten with the palm of your hand. Fry in hot oil (370'F) until golden. Drain on paper towels. Roll in cinnamon/sugar mix.

Yummy Lemon - Ginger Pudding

Yummy Lemon - Ginger Pudding 2 - inch piece fresh ginger, peeled Zest of 1 lemon, plus juice of 1 1/2 lemons 1/2 cup sugar 2 tbsp. cornstarch pinch of salt 1 cup whole milk 3/4 cup half and half 1 tbsp. unsalted butter. Grate the ginger into medium bowl. Add the lemon zest and juice, set aside. Whisk the sugar, cornstarch, and salt together in a medium sauce pan. Add the milk and half and half, whisk to combine. Bring ingredients to a simmer over medium-high heat while whisking constantly, until the mixture is thick and starts to boil, 6 to 8 mins.  Turn off the heat and use a spoon to stir in the ginger - lemon mixture and the butter, slowly stirring until butter is completely melted. Pour the mixture through a fine mesh sieve  and into a medium bowl. Cool 10 minutes before covering with plastic wrap and refrigerating. You can divide it into serving size dishes also at this point, cover them with plastic wrap. Refrigerate for at least 1 hour. Makes 4 servings.

Fresh Fruit Pizza

Fresh Fruit Pizza Crust: 1/2 cup powdered sugar 3/4 cup butter (room temperature) 1 1/2 cups flour. Mix and pat in 9 x 13 pan. Bake at 350' for 10 - 15 mins. until edges brown. Cool. Sauce: 1 (8 oz.) pkg. cream cheese(softened) 1/2 cup powdered sugar 1 tsp. vanilla. Mix together and spread on cooled crust. Cut various fresh or canned fruits in small pieces or thin slices. (There are many fresh fruits that may be used; nectarines, peaches, grapes, blueberries, cantaloupe, bananas, plums, kiwi fruit and fresh or canned pineapples.) Place the fruit in a single layer on the cream cheese layer. Glaze: 2 tbls. cornstarch 1 cup fruit juice (pineapple or grapefruit) 1/2 cup sugar 1 tsp. lemon juice. Heat this mixture until it boils. It will thicken as it cools. Drizzle the glaze over the fresh fruit layer. Yummy!
