Potato Meatballs

Potato Meatballs Recipe

1 lb. ground beef
1/2 cup fine bread crumbs
1/3 cup milk
1 medium raw potato(grated)
1 small onion(grated)
salt and pepper to taste
1 (10 1/2 oz.) can cream mushroom soup
1 soup can skim milk and some flour.

Mix first six ingredients together and shape into 1 1/2 inch meatballs. Lightly roll in flour and brown. Drain any grease. Place in large casserole or 9 x 13 pan. Blend soup and skim milk. then pour over meatballs. Cover and bake at 350' for 1 hour.

Tasty dish!!!

Monster Cookies

Monster Cookies Recipe, yum, yum!

4 eggs
1 1/2 cups brown sugar
1 1/2 cups sugar
2 tsp. vanilla
1 tbsp. light corn syrup
2 1/2 tsp. baking soda
10 tbsps. butter
2 cups peanut butter
6 cups oatmeal
1 cup chocolate chips
1 cup. mini M&M's

Beat eggs, add remaining ingredients In order. Mix thoroughly before adding oatmeal and chocolate. Spoon mixture onto a non-stick baking sheet. Bake at 350' for 12 - 15 minutes. Enjoy!

Coconut Chicken Chili

Coconut Chicken Chili . What an interesting Chili recipe. It is quite tasty.

12 oz. skinless, boneless chicken breasts, chopped
1 large inion
1 1/2 tsp. chili powder
1 1/2 tsp. ground ginger
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. cayenne pepper
1 tbsp. olive oil
1 tbsp. flour
1(14 oz.) can unsweetened coconut milk
1 tbsp. peanut butter
1 can white beans(rinsed and drained)
3 med. carrots(shredded)
1 stalk celery(sliced)
1 green onion(sliced)
5 cloves of garlic(minced)
hot cooked white rice.

In large saucepan, cook chicken, onion, chili powder, ginger, salt, and both peppers in hot oil over medium heat for 6-8 minutes or until chicken is no longer pink. Stir in flour and cook 1 minute more. Stir in coconut milk, peanut butter, and 1 cup of water. Bring to boil, stirring occasionally.
Stir in beans, celery, carrots, green onion, and garlic. Return to boil, then reduce heat. Simmer covered for 10 minutes. Serve over hot white rice.
