General Hints for Vegetarian Cooking Common Substitutes: Ground Beef: Use texturized vegetable protein or soy meat substitute, which is found in bags in the frozen health food section of most grocery stores. One brand is Morningstar farms. TVP won't work for meatballs. (I've try it!) but it will work for spaghetti, chili, and casseroles. Chicken or Beef Broth: Vegetable broth is sold in cans, cartons and cubes in the health food section. Nature valley and Westbrae Natural are 2 good brands. Vegetable broth will work up into a respectable gravy, especially if you can play with some spices. You can even make chicken broth: 1 1/3 c. nutritional yeast flakes 3 T. onion powder 2 1/2 tsp. garlic powder 2 1/2 T. salt 2 1/2 T.
