Delicious Beef and Cabbage Scallops Recipe

1 lb. ground beef
1 cup chopped celery
1/2 cup chopped onion
2 tbsp flour
1 (12oz.) can tomatoes
1 (8oz.) can tomato sauce
1 1/2 tsp. salt
1 tsp. oregano
1/4 tsp. pepper
4 cups coarsely chopped cabbage
2 cups thinly sliced peeled potatoes
2 cups bread crumbs
2 tbsp. melted butter.

Brown beef, add celery and onions, cook 5 mins. Drain, Stir in flour, tomatoes, tomato sauce, and seasonings. Bring to a boil, remove from heat. In a 3 qt. casserole dish, alternate meat, cabbage, potatoes. Top with bread cubes and butter. Bake covered at 375' for 1 hour. Serves 8.

2 1/2 cups milk, 2 eggs, beaten, 2 cups 1-inch cubed white bread, 1/2 cup brown sugar, 1/2 tsp. cinnamon, 1 tsp. vanilla, 1/4 tsp. salt, 1/2 cup raisins.

Combine all ingredients in a casserole dish. Place casserole dish in a larger pan with 1/2 inch of water in the bottom. Bake at 350' for 30 minutes.

Dressing:
2 Tbsp. sugar
2 Tbsp. vinegar
1/4 cup oil

Combine sugar, vinegar, and oil for dressing. This makes enough for two salads. You may double, or triple for more.

Sugared Almonds:
1/4 cup slivered almonds
2 Tbsp. sugar
1 small can Mardarin oranges, drained

Heat almonds and sugar in saucepan over medium heat, stirring constantly, until all sugar is melted and almonds are coated and brown. Be careful, they burn easy. Spread on wax paper to cool. Break apart. Store in a airtight container.

Toss lettuce salad with desired amount of oranges. Sprinkle on sugared almonds. Add dressing to taste. Great spring salad.

Fresh Salsa

3 tomatoes, diced
1/4 cup red onion, diced
1/4 cup green pepper, diced
1 red jalapeno, diced
1 green jalapeno, diced
1 tbsp cilantro, minced
dash of salt.

Mix all together and serve with tortilla chips.

1 pkg. yellow cake mix
1 (3oz.) pkg. lemon Jello
4 eggs
3/4 c. water
3/4 c. vegetable oil.

Combine and Beat the first 4 ingredients. Add oil, Beat an additional 1 min. Grease and flour a 9x 13-inch cake pan or use tube pan. Bake 45 mins. at 350'. Before removing cake from oven, prepare glaze.

Glaze:
1 c. powdered sugar
1/2 c. orange juice.

Remove cake from oven. Poke holes in warm cake with a fork on top of the cake. Pour orange juice topping over the cake. Serve when cool, with whipped cream. A very delicious moist cake!

Crispy Bacon Salad with Kale Recipe

Crispy Bacon Salad with Kale Recipe

2 bacon strips
1 Bunch of Kale, tough ribs removed
Juice of 1/2 lemon
Juice of 1/2 orange
1/2 teas. kosher salt
2 scallions(white and green parts)trimmed and finely chopped
1 tomato, cored, halved, and chopped
2 tbsp olive oil
1/4 teas. ground black pepper.

Heat a small skillet over medium heat. Add bacon and cook crisp on both sides, about 6 mins total. Transfer to a paper towel-lined plate and set aside to cool. Once cooled, chop bacon into small bits and set aside.

Stack 5 or 6 kale leaves on top of one another and slice crosswise into thin strips. Transfer to a large bowl and repeat with remaining leaves. Add lemon juice, orange juice and salt and use your hands to rub the citrus and salt into the leaves. Let kale sit for 5 mins. before adding the scallions and tomato. Drizzle with the olive oil, add the pepper and bacon, toss to combine. Love this salad :-)
