Hearty Cheese Salad Recipe

2 lb. Swiss cheese, shredded
1 cup stuffed olives, sliced
2 cups green onions, finely chopped

1 cup olive oil
1/4 cup red wine vinegar
4 tsp. Dijon mustard
1 tsp. salt
Freshly-ground pepper

Combine the cheese, olives and green onions. For the dressing, combine all ingredients and mix well. Toss all ingredients and serve on salad greens. 8 to 10 servings.
Serve as a entree with crusty French bread, a tossed green salad and a hearty red wine. $14.00

Annette's Wonderful Easy Vegetable Medley

1 (16 oz.) pkg. frozen vegetables, thawed and drained.
1 can cream of mushroom soup
1 cup shredded Cheddar Cheese
1/3 cup sour cream
1/4 tsp. pepper
1 (2.8 oz.) can french fried onions

Combine all ingredients except 1/2 cup cheese and 1/2 can onions in a shallow, greased 1 qt. casserole. Bake uncovered at 350' for 30 minutes or until veggies are done. Remove from oven. Top with remaining cheese and onions. Bake additional 10 minutes uncovered. $35.00

Zucchini-Pineapple Bread

Zucchini-Pineapple Bread

3 eggs
2 c. sugar
2 tsp. vanilla
1 c. oil
2 c. zucchini, unpeeled and shredded
1 (8 oz.) can crushed pineapple
3 c. flour
1 tsp. salt
2 tsp. baking soda
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
If desired also add 1 c. nuts 1 c. raisins

Beat eggs, oil, sugar and vanilla until foamy. Stir in zucchini and pineapple; blend in rest of ingredients. Bake in loaf pans at 350' for 1 hour.

Delicious Cheddar Spinach Pie

4 eggs, beaten
1 cup milk
1/2 tsp. salt
pepper to taste
2 cups Sharp shredded cheddar cheese
2 tbsp. flour
1 (10. oz.) pkg. frozen spinach, separated and drained

Combine eggs, milk, and seasonings. Mix well. Toss cheese with flour and add to egg mixture. Stir in spinach. Pour into well greased 9-inch pie plate. Bake at 350' for 40 mins. or until knife inserted in center comes out clean. Serve with tossed salad and crusty French bread! $10.00
