Yummy Crock Pot Salsa Chicken Recipe

4 boneless skinless chicken breast(frozen in bag)
1 pkg. taco seasoning
1 jar salsa
1/4 c. sour cream

Place frozen chicken breast in the bottom of a crock
pot that was sprayed with Pam. Sprinkle taco seasoning
over chicken and dump the jar of salsa over that. Cook
on low all day. When done, take chicken out onto a plate.
Stir the sour cream into the salsa mixture to make it
thicker. Serve over rice, pasta, or tortilla.

Not including pasta, rice, etc, 4 Weight Watchers points. Serves 4

Can't pass up this cucumber dip recipe

8 oz. Feta cheese
1/4 t. salt
1/4 t. pepper
3 T. lemon juice
1 lg. cucumber, peeled, seeded and diced
1 sm. red onion, diced
2 T. fresh parsley, chopped

1/4 c. olive oil

Pita Chips:
2 pkgs. white pita bread, cut into triangles
Olive oil brushed onto pita bread
Garlic salt

Mix together ingredients for dip. Refrigerate.
Prepare pita chips. Bake at 400' for 8-10 mins.
Then serve.

Delicious Parmesan Halibut Recipe

1 box cheese garlic croutons
3/4 c. grated parmesan
Cracked pepper to taste
3/4 c. oil
3 to 4 lbs. halibut

Crush croutons, add to large zipper bag. Add cheese and
a little cracked pepper to crumbs in bag. Zip and shake
to combine. Line baking sheet with foil then spray. Dip
halibut peces in oil a few at a time. Add pieces to crumbs,
cover pieces and place on baking sheet. Repeat process
until fish pieces are covered. Bake at 350' for 20 to 30
mins. until fish flakes easily.

Strawberry Margarita Pie Recipe

2 c. chocolate cookie crumbs or graham cracker
crumbs, crushed fine(or buy the ready made chocolate
or graham cracker crust)
1/4 c. butter, melted
1 can sweetened condensed milk
1/4 c. lime juice
3 T. Tequila
3 T. Triple Sec
1-10 oz. frozen strawberries, thawed
1-12 oz. container Cool Whip

Mix together cookie crumbs and melted butter. Press
into a pie plate, (or use ready made crusts). Mix
together sweetened condensed milk, lime juice, Tequila,
Triple Sec, strawberries, and Cool Whip. Pour over pie
crust. Freeze until firm, at least 2 to 3 hours. Enjoy!

Diane's Cashew Apple Salad Recipe

1 bunch Romaine lettuce, chopped
1 apple cut into bite size(Braeburn is best)
4 oz. Swiss cheese, shredded
8 oz. cashews

3/4 c. sugar
1/3 c. white vinegar
1 t. dry mustard
1 t. salt
1 c. canola oil
1/2 T. poppy seeds

Mix dressing together and chill. Mix salad
ingredients together. Toss with desired amount
of chilled dressing and serve. Save any extra
dressing for later use. Great salad!
