Fresh Herbs and Rice

Fresh Herbs and Rice 1 1/2 cups long grain white rice 1 tbsp. plus 1/2 teas. kosher salt 2 tbsp. unsalted butter 1/4 cup freshly chopped herbs, like chives, basil, mint ect. ect. Bring a large pot of water to boil. Add rice and 1 tbsp. of salt and cook, stirring occasionally until rice is done. Drain through mesh sleeve and rinse under cold water. Drain as much as possible. Melt the butter in a skillet over medium heat. Add the rice and remaining 1/2 teas. salt, then stir to coat all the rice with the butter. Transfer to a bowl add herbs, stir, then serve. Makes 4 servings.

Baked Pineapple

Baked Pineapple Here's a recipe for pineapple lover's! 1/2 c. butter 2 eggs(beaten) 5 slices white bread (cubed) 1 c. Sugar 20 oz. crushed pineapple(sweet). Cream butter and sugar. Add beaten eggs. Stir in pineapple and the juice. Fold in the bread cubes. Turn into greased 1 1/2 quart casserole. Bake uncovered at 350' for 1 hour.
