3 Easy Jane's Tips for the Kitchen

Cooking with Eggs

I think I am the only cook in the world that didn't know how to handle cooking with eggs. The Tip: eggs for baking, frying, omelets should be room temperature; eggs for boiling should be cold eggs with cold water. Peel hard-boiled eggs while they are still warm.

Cooking Bacon

It seems like such a nuisance to cook only a few slices of bacon when an urge for a BLT or bacon an eggs overwhelms me. My solution: I bake 1 pound of bacon at a time by laying the slices singly on my broiler pan. Bake at 350' for 30 mins (a little longer if you buy the thick sliced). When it is nicely cooked, lay the slices between paper towels to drain. When the bacon has cooled, put the slices between layers of wax paper in a shallow plastic frozen container. Freeze until ready to use. At the time of serving, zap the slices you need wrapped loosely in a paper towel, in the microwave for about 35 seconds. The bacon tastes as if it was freshly fried.

Cookie Dough

When I stir up cookies that have to be chilled, I remove the dough from the mixing bowl and wrap it in plastic wrap before refrigerating. At the time of baking, soften the dough (especially if they are rolled cookie) in the microwave for about 4 or 5 seconds.
