Spinach Potatoes

Spinach potatoes recipe

6-8 large potatoes, or 12 servings instant potatoes
3/4 cup sour cream
1/4 lb. butter(or less)
2 tsp. salt
1/4 tsp. pepper
10 oz. pkg. frozen chopped spinach
1 cup shredded cheddar, divided

Thaw and drain spinach. Cook and mash potatoes. Stir in spinach and remaining ingredients, reserving 1/4 cup of cheese to sprinkle on top. Put in casserole and top with cheese. Bake at 400' for 20 minutes.
