Mom's Brunch Pizza Recipe

1 (24 oz.) pkg. frozen shredded hashbrowns, thawed
1 egg

Egg topping:
7 eggs
1/2 cup milk
1 1/2 cups sliced velveeta cheese

Optional toppings:
Chopped onion
Chopped green peppers
Sliced mushrooms
Bacon, cooked and crumbled
Chopped ham

Preheat oven to 400'. Place parchment paper on 15" pizza
pan. (Do not bake without parchment paper). Combine potatoes
and 1 egg in a bowl. Spread potatoes on pizza pan in a 14" circle.
Pat down. Bake for 20 mins. Whisk 7 eggs and milk in a microwave
bowl. Microwave on high for 3 mins. Stir. Cook an additional 3 mins.
Stir. Spread cooked eggs evenly over baked potato crust. Top with
additional toppings. Sprinkle with cheese and bake for 10 mins.
Cut into wedges with pizza cutter!
